Delights at Corina Cake Bakery
After a swift day at work last Friday, Sarah and I had some viddles with Angela and Steve at Meconi's then headed up the hill for dessert. The girls had their sights set on a little shop we'd yet to sample. Corina Bakery sits on the 6th Ave. hill between Tacoma Ave. and Fawcett, just around the corner from the Grand Cinema. The small spot lends nicely to this family run business of sweet treats. The place seemed to have steady business in a town that mostly shuts down after 5pm. The service by the owners/operators was swift and we each went away with a grocery bag full of things we wanted to sample from their display case.
Once back at Angela and Steve's we dug in. I snagged a cappucino chocolate bar and a piece of berry cheesecake. The bar was soft yet slightly flaky on the outside and was a generous size. Its flavor was a good balance between the chocolate and coffee since neither jumped out to bother me. My fav had to be the cheesecake. It was soft, had a very fresh berry taste but wasn't too heavy or sweet. I used to eat me a lot of cheesecake and, brother, this is the best I've ever had.
Everyone else had cupcakes, cake, and I'm not sure what else. The only complaint I heard was from the chocolate cake but they couldn't pin down the reason it wasn't sitting right.

Ohman. I shouldn't go there everever, my waist would never recover :) I am, however, wearing my The Grand t-shirt, and feeling very Tacomian.
(I sent you an email a little bit ago - did it get past the spam protection? Plus, as of today, my coming back to the US has been move forward to the middle of October.)

I have never been to this near hidden bakery. However, all the reports about them have been very positive.
They are apparently attracting quite a following.

Ok. I just got back. I can't believe I ate a whole piece of chocolate cake myself. It sure was good.

Corina is on my daily walk to work. The reality has exceeded my expectations as I dreamed about their offerings in anticipation of their openning. Some mornings the smells of baking waft up the block to the corner of Tacoma Ave and 6th where I wait to cross, irrisistable. Sadly they open at 8 and unless I'm already running late, they've yet to open their doors. A great addition to the neighborhood, and they bake and decorate cakes to order for your next party of office birthday! Schmeckt gut!

When I was a little tike my mother made banana pudding on Sunday's after church. I know sounds corny but that dessert became my favorite of all times. The trick is letting the banana's age and using them at the right time. Too soon and it doesn’t taste right and too late they are mushy. Mom always nailed it. So when I heard a little bakery like corina’s took the time to make the simplest of desserts I was intrigued. As you can see from Kevin’s the picture I tried some. And on a scale of 1-10 compared against my mothers of course it's an 8-1/2. There is nothing better on a hot day than a good heaping bowl of banana pudding. Thanks Corina's bakery for making the effort. And just as a side note I didn’t like the chocolate cake either. I’m not holding that againt them because the other desserts I sampled were terrific. I hope this little bakery is with us for a long time to come. I know they have a regular with me. Plus I’ll loose plenty of inches off my waistline WHEN I’m DEAD! So for now HELLO Corina! Cheesecake here I come.

"Corina Bakery will close down on June 17 for about a week, so that the Gayas can expand the space. The bakery itself will move upstairs, with an expanded downstairs that will potentially include a wheelchair accessible restroom."

Great place. Nice to see it expand. Perhaps they will have a larger place to sit.

Am movving back to Tacoma for retirement. Only been gone 50 years! I'll be at the Roberson, can't wait to try the Corina. Thanks for sharing their story, especially Walts. Look forward to meeting them.
